Chicken Colombo

Instructions

  • 1.   Cut the chicken into pieces.
  • 2.   Peel the potatoes and cook them for 15 minutes in a pot of boiling water (they should not be completely cooked).
  • 3.   Drain the potatoes and cut them into large cubes.
  • 4.   Cut the tomatoes into pieces.
  • 5.   Peel the garlic and onions.
  • 6.   Slice the onions and crush the garlic cloves.
  • 7.   In a sauté pan, sauté the chicken and onions in olive oil.
  • 8.   Add the garlic, then the tomatoes.
  • 9.   Season with salt, pepper, and sprinkle with Colombo spice.
  • 10.   Reduce the heat, cover, and let simmer for about thirty minutes.
  • 11.   Five minutes before the end of cooking, add the potatoes.
