Zucchini and Salmon Waffle (With or Without Cook'in)

Retrieved from Angelle's Kitchen Blog We loved this combination of zucchini and smoked salmon, plus they are light and airy in texture. Served with a chive cream and a good green salad, a perfect dinner to make again!

Instructions

  • 1.   For 8 to 10 waffles:
    Wash and peel the zucchini, leaving the skin on every other strip (to add some color). Blend it together with the smoked salmon (a few pulses on Turbo with the Cook'in).
  • 2.   With Cook'in: Place the butter in pieces in the bowl and set for 1min/60°C/speed 2. Add the rest of the ingredients and mix for 30sec/speed 4.
  • 3.   Without Cook'in: Melt the butter. Add the egg and mix. Mix together the flour and baking powder, add to the previous mixture. Gradually add the milk, avoiding lumps. Finish with grated cheese, salt, and pepper.

    Incorporate the zucchini/salmon mixture into the waffle batter and let it rest for a good hour at room temperature. Grease the waffle iron and heat it up. Cook the waffles for about 5 minutes at thermostat 7.

  • 120 g of wheat flour
  • 2 eggs
  • 40 g of butter
  • 60 g of grated Gruyère cheese
  • 1 bag of baking powder
  • 220 g of semi-skimmed milk
  • 1 pinch of salt and pepper
