Welsh Rarebit (Welsh breakfast)

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Place the slices of bread on oven-safe plates, with a slice of ham on each slice of bread.
  • 3.   Cut the cheddar into small cubes.
  • 4.   Melt the cheddar in a saucepan over very low heat, stirring constantly with a wooden spoon.
    The cheese will first become stringy, that's normal, keep stirring and kneading.
  • 5.   When the consistency is thick enough to coat the spoon, add the beer. The mixture will foam, that's normal!
  • 6.   Continue stirring until the beer and cheese are well combined. Add the mustard.
  • 7.   Once the mustard is incorporated into the mixture, pour it over the 2 plates and bake to brown and warm the plates.
  • 8.   Prepare the fried eggs.
  • 9.   Remove the plates from the oven. Be careful, they are hot, you need to transfer them to a second plate to avoid melting the coating!
  • 10.   Place a fried egg on top of the golden cheese on each plate.

Notes & Suggestions

  • In restaurants, Worcestershire sauce is often served as a condiment for this dish, but it's not really necessary.
    Whole grain bread has more flavor and holds up better on the plate. The cheese should never boil... If it forms small grains, it means it was heated too high.

  • 2 stalk of whole wheat bread
  • 2 slice of white ham
  • 1 teaspoon of mustard
  • 8 cl of blonde beer
  • 2 eggs
