1. Preheat the oven to 215°C/425°F.
2. Place the salmon on a baking sheet and coat it with oil.
3. Season with salt and pepper.
4. Bake in the center of the oven for about 10 minutes, depending on the thickness of the fillet.
5. Let it cool for about ten minutes before refrigerating for a minimum of 2 hours.
6. Meanwhile, cook the rice.
7. Let it rest in the refrigerator for at least 1 hour.
8. Boil the eggs (10 minutes), then immediately cool them under cold water and set aside.
9. When ready to serve, prepare the vegetables: grate the carrots, dice the celery, and finely chop the green onions.
10. Put them in a salad bowl, add the rice and peas.
11. Pour in the extra virgin olive oil and lemon juice and mix well.
12. Check the seasoning.
13. Transfer the rice salad to a plate.
14. Cut the salmon into pieces and the eggs into quarters, then place them on top of the rice salad.
15. Serve with mayonnaise.
