Cyril Lignac's Potato Salad

A potato salad with tuna, tomatoes, green beans, and olives with a homemade vinaigrette.

Instructions

  • 1.   Place the potatoes in a pot of salted water and cook for about 20 to 25 minutes at a simmer. Check the doneness with the tip of a knife. Once cooked, peel them.
  • 2.   In a salad bowl, crumble the tuna, add the green beans, the washed and diced tomatoes, the sliced olives, and the chopped chives.
  • 3.   Cut the potatoes into irregular pieces and add them to the mixture. Let it rest in the refrigerator.
  • 4.   For the vinaigrette, mix the mustard, vinegar, and gradually add the oil to obtain a thick sauce.
  • 5.   Add the vinaigrette to the potato salad and season with salt and pepper.
  • 6.   Mix well, then enjoy.

  • 800 g of potato
  • 80 g of pitted black olive
  • 2 tunas
  • 2 beefsteak tomatoes
  • 5 sprig of chives
  • 2 tablespoon of mustard
  • 1 tablespoon of balsamic vinegar
  • 6 tablespoon of olive oil
  • 220 g of canned green bean
  • salt (according to taste)
  • pepper (according to taste)
