Instructions

  • 1.   Slice the red onion and marinate it in the juice of 1/2 lime and salt. Set aside.
  • 2.   Finely slice the cucumber in a large dish, and add the half mango diced, shredded leftover roasted chicken, then add the marinated red onion.
  • 3.   Zest a lime over the top and add the mayonnaise, sriracha sauce, lime juice, soy sauce, and mix by hand to ensure everything is well coated.
  • 4.   You can add sesame seeds and peanuts as toppings.
  • 5.   It's ready. Keep refrigerated or enjoy right away.

  • 1 drizzle of cooked chicken

  • 1 tablespoon of mayonnaise
