Instructions
1. Slice the red onion and marinate it in the juice of 1/2 lime and salt. Set aside.
2. Finely slice the cucumber in a large dish, and add the half mango diced, shredded leftover roasted chicken, then add the marinated red onion.
3. Zest a lime over the top and add the mayonnaise, sriracha sauce, lime juice, soy sauce, and mix by hand to ensure everything is well coated.
4. You can add sesame seeds and peanuts as toppings.
5. It's ready. Keep refrigerated or enjoy right away.
