Salmon, Cucumber, and Apple Pasta Salad

Instructions

  • 1.   Cook the pasta according to the package instructions. Drain, rinse under cold water, drain again, and set aside.
  • 2.   Peel and slice the shallot. Wash the cucumber and apples, remove the seeds, and cut them into small cubes. Cut the smoked salmon into thin slices.
  • 3.   In a salad bowl, mix the yogurt with the sliced shallot and 1 tbsp of lemon juice, salt, and pepper. Add the pasta, smoked salmon, cucumber, and apple cubes. Mix well and chill until ready to serve.
