Piemontese Pasta Salad

Instructions

  • 1.   Cook the pasta in salted boiling water according to the package instructions, then drain and let it cool.
  • 2.   In another pot, cook the peeled potatoes in salted boiling water for about 20 minutes. Check the doneness with a knife, then drain, let them cool, and cut them into cubes.
  • 3.   Wash, peel, and seed the tomatoes, then cut them into small cubes. Slice the pickles thinly.
  • 4.   In a salad bowl, mix the pasta, potato cubes, tomatoes, ham cubes, and hard-boiled eggs also cut into small cubes.
  • 5.   Add the mayonnaise, season with salt and pepper, and mix well. Garnish with a few parsley leaves and serve chilled.
