3. Sauté it in a pan with oil, add the minced meat and brown it for 5 minutes.
4. Add the tomatoes with their juice, let it simmer over low heat for 15 minutes to reduce the sauce by half.
5. Remove from heat, stir in the chopped parsley, season with salt and pepper.
6. Line a mold with parchment paper, fill it with puff pastry and pour in the mixture.
7. Cover with the second puff pastry, pinch the edges and brush with egg yolk.
8. Bake for 30 minutes and serve hot.
