Instructions

  • 1.   In a large salad bowl, mix the skyr, mustard, olive oil, salt, and pepper.
  • 2.   Add 8 hard-boiled eggs that you have sliced. Do the same for the steamed potatoes (without the skin). Add the shrimp and mix everything together.
  • 3.   Finish with chopped green onion (or chives). Serve with steamed or roasted vegetables for a complete, low GI, protein-rich, and nourishing dish.
