Low-GI Frittata with Peas, Feta & Trout

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Beat 1 egg with the flour until smooth. Add the plant-based cream, then the other eggs with a pinch of salt & pepper.
  • 3.   Pour the mixture into a 20x20cm (8x8 inch) square baking dish lined with parchment paper. Crumble half of the feta into the batter and reserve the rest for the topping. Add some peas, then slices of smoked trout, and cover with feta and peas again. Sprinkle with sunflower seeds and bake for about 30 minutes.
  • 4.   Let cool completely in the refrigerator before cutting into squares with a sharp knife.

  • 30 g of flour
  • 80 g of feta
  • 50 g of green pea (frozen)
  • 100 g of smoked trout
  • 1 tablespoon of seed
  • salt (according to taste)
  • pepper (according to taste)
