Instructions

  • 1.   Preheat the oven to 180°C (356°F).
  • 2.   Prepare a large baking sheet (mine: 40x30cm) by covering it with parchment paper.
  • 3.   Slice the mushrooms and red onion into thin slices. Set aside.
  • 4.   Mix the flours, yeast, and salt in a small bowl. Add the eggs, oil, water in 3 times, and whisk until smooth. Pour and spread on the baking sheet.
  • 5.   Arrange the mushrooms and onion slices. Season with salt.
  • 6.   Sprinkle with grated cheese and bake for 12 minutes.
  • 7.   Meanwhile, cut the ham into small squares, set aside.
  • 8.   Remove the baking sheet from the oven, crack 6 eggs on top (according to the space you have), season with salt, pepper, sprinkle with ham, and bake again for 10 minutes. Monitor the cooking, all ovens are different: the whites should be set, the yolk should remain runny.
  • 9.   Chop the chives, cut with a rolling pin, and serve with a salad.

  • 80 g of grated emmental
  • 3 slice of ham
  • 2 tablespoon of chives
  • salt (according to taste)
