Mackerel, Tomato, Carrot, and Onion Couscous

Instructions

  • 1.   Put the couscous in a bowl, add the coarse salt, and mix
  • 2.   Heat the water in a saucepan until boiling, add the couscous, and mix
  • 3.   Remove from heat, cover, and let it swell, then fluff with a fork
  • 4.   Let it cool completely, then transfer the couscous to a large shallow dish
  • 5.   Peel the onion
  • 6.   Slice the onion and add it to the couscous
  • 7.   Peel the carrots
  • 8.   Grate or chop the carrots and add them to the bowl
  • 9.   Wash the tomatoes, remove the stems
  • 10.   Cut the tomatoes into cubes and add them to the bowl
  • 11.   Mix, season with salt and pepper
  • 12.   Drain the mackerel
  • 13.   Add the oil and mackerel juice, mix, and crumble the mackerel
  • 14.   Rinse and dry the parsley
  • 15.   Add the mackerel and parsley to the couscous
  • 16.   It's ready!
