Savory macarons with peas and bacon

Savory macarons with peas... I had thought about them for the first green picnic and finally opted for pistachio macarons. This time I dared and these savory macarons were a great success. Very strange this sweet sensation and this little salty taste. Without the bacon, you could mistake them for a dessert!

Instructions

  • 1.   1. Mix the icing sugar and almond powder to obtain the finest possible mixture. Then sift them.
  • 2.   2. Beat the egg whites until stiff peaks form with a pinch of salt. Add the sugar and make a meringue with the whites (continue beating for 2 to 3 minutes). While still whisking, incorporate the green and yellow powdered food coloring to achieve the desired color.
  • 3.   3. Pour the powders over the meringue and mix with a spatula by gently folding the mixture to avoid breaking the whites.
  • 4.   4. Continue working the batter until it forms a ribbon-like consistency.
  • 5.   5. Spread the batter on a baking sheet lined with parchment paper. Let it rest for 1 hour.
  • 6.   6. Meanwhile, cook the peas for 10 minutes in boiling salted water. Cook the bacon in the cream for 5 minutes over low heat. Drain the peas and finely mix them with the bacon and cream.
  • 7.   7. Bake the macarons for 12 to 15 minutes in the preheated oven at 145°C. Then let them cool completely before handling.
  • 8.   8. Fill them with the pea cream. The macarons should be consumed between 2 and 12 hours after being filled. After that, they may become too soft.

  • 80 g of egg white
  • 1 pinch of salt
  • 60 g of powdered sugar
  • 1 drizzle of colorant alimentaire vert
  • 150 g of green pea (frozen)
  • 70 g of liquid fresh cream
  • 40 g of bacon cube
