  • 1.   How to make split pea puree?
  • 2.   1. Soak the split peas in cold water for 1 hour.
  • 3.   2. Meanwhile, peel and slice the carrot, and peel and finely chop the onion.
  • 4.   3. Place the drained split peas in a large saucepan of water (at least 3 times the volume of the split peas). Add the onion, bacon lardons, carrot, and bouquet garni. Bring to a boil and let simmer for about 1 hour over medium heat.
  • 5.   4. Drain the vegetables and lardons, reserving the cooking water, and crush them with a vegetable mill or in a blender. Incorporate some of the cooking water to achieve your desired consistency. The puree should remain fairly thick. Season with salt if needed.
