Chicken Curry Endives

Instructions

  • 1.   In a saucepan, boil the endives in salted water for about fifteen minutes.

    Drain them.
  • 2.   Meanwhile, slice the onion.

    Wash and slice the mushrooms and the bell pepper.
  • 3.   In a skillet with a drizzle of olive oil, brown the chicken strips for 4-5 minutes.

    Season with salt and pepper.
  • 4.   In the saucepan, over low heat, put back the endives with a drizzle of olive oil.

    Add the chicken strips, the sour cream, and the Indian curry spices.

    Season with salt and pepper.

    Let simmer for about ten minutes.
