Tuscan-style salmon fillets (tomato and parmesan sauce)

The benefits of salmon are well known: it is rich in omega-3, high in protein and vitamins... Whether cooked or smoked, we all love it, so it's best to consume it sustainably - for example, with the MSC label - to preserve our beautiful oceans! To honor this exceptional fish, I propose a recipe from Tuscany: healthy, delicious, and easy to cook, suitable for both a weeknight dinner and a festive meal. I find that the tomato season is always too short, but we can continue to enjoy it with delicious MUTTI sauces. I recommend serving your fish with tomatoes and pasta like spaghetti to respect Italian traditions!

Instructions

  • 1.   1. In a saucepan, pour a drizzle of olive oil, add the finely chopped shallots and minced garlic, then sauté for a few minutes.
  • 2.   2. Add the cream and tomato sauce and 75g of parmesan cheese, and let it cook for 2 minutes. Then, add the spinach, basil, and oregano, bring to a simmer, then reduce the heat to low until the sauce is well reduced.
  • 3.   3. Meanwhile, pour olive oil into a large skillet and heat over high heat. Place the salmon skin side down, season with salt and pepper, then cook for 5 minutes. Flip the fish, season again, and continue cooking for 2 minutes.
  • 4.   4. Pour the sauce over the salmon, let it simmer for about 5 minutes to finish cooking, and sprinkle with pink peppercorns. Serve immediately.

  • 1 bunch of basil
  • 1 tablespoon of dried oregano
  • 4 salmons
  • 1 pinch of flower of salt
  • 1 pinch of pink peppercorn
