Scallops in white wine and shallots

A simple starter of scallops in white wine and shallots. Be careful not to overcook the scallops, as they may become tough and rubbery.

Instructions

  • 1.   1. Peel and finely chop the shallot.
  • 2.   2. In a skillet, heat the butter and oil. Sauté the shallot for 2 to 3 minutes.
  • 3.   3. Place the scallops in the skillet and sear them for 1 minute over high heat. They should be golden brown.
  • 4.   4. Turn them over using tongs or a fork. Pour in the white wine and let it cook over high heat for 1 to 2 minutes. Add the cream, mix well, and serve immediately.

  • 8 cl of white wine
  • 1 tablespoon of thick sour cream
