Irish stew: Irish beef stew with beer

Instructions

  • 1.   1. Cut the chuck into cubes of 2.5 by 2.5 cm.
  • 2.   2. Sprinkle with black pepper and paprika, mix, add the flour and mix again.
  • 3.   3. In a pan, heat the butter and brown the beef cubes.
  • 4.   4. Add the roughly chopped onions, sauté for 1 minute then deglaze with the Guinness. Then add the bay leaf and thyme. Cover, reduce the heat and simmer for 1.5 hours, stirring regularly.
  • 5.   5. Add the leek sliced into rounds and the carrots cut into 1 cm cubes. Let the stew simmer for about 1 more hour. Season to taste with black pepper and salt before serving.

  • 600 g of beef chuck
  • 3 teaspoon of paprika
  • 4.5 tablespoon of flour
  • 90 g of butter
  • 3 onions
  • 50 cl of bière Guinness
  • 4 bay leaves
  • 4 sprig of fresh thyme
  • 1 large leek
  • 2 carrots
  • salt (according to taste)
  • pepper (according to taste)
