Instructions

  • 1.   Bring a large pot of salted water to a boil.
    Cook the spaghetti al dente according to the package instructions.
    Drain them, reserving a small ladle of cooking water (useful for thinning the sauce if necessary).
  • 2.   In a large skillet, pour 2 tablespoons of olive oil and heat over medium heat.
    Sauté the onion and garlic for 3 to 4 minutes, until they become translucent.
  • 3.   Add the diced red pepper. Sauté for 5 minutes until they soften while still retaining a slight firmness.
    Incorporate the pieces of chorizo. Cook for another 3 minutes, until they release their fragrant and colorful fat.
  • 4.   Add the peeled shrimp. Sauté them for 1 to 2 minutes per side, until they turn pink and slightly firm.

    Lightly salt, generously pepper.
  • 5.   Pour the heavy cream directly into the skillet.
    Mix well to coat all the ingredients.
    Simmer over low heat for 5 minutes, stirring occasionally.
  • 6.   Add the drained spaghetti directly into the skillet.
    Gently mix to coat them well with the sauce, without crushing the shrimp.
    Cook for an additional 1 to 2 minutes for the flavors to blend perfectly.
  • 7.   Serve your spaghetti in shallow bowls, sprinkled with chopped parsley, shavings of Parmesan, or fresh basil.
    Pair this dish with a glass of dry white wine (such as a Picpoul, a Côtes-du-Rhône blanc, or an Albariño).
    A crisp green salad as an appetizer or some tomato bruschettas will be perfect for a complete Mediterranean meal.
