Carrot and Bacon Quiche

Instructions

  • 1.   Peel the carrots and cut them into rounds. Sauté them in a pan with a drizzle of olive oil. Add a little water and cook for about ten minutes. Add the bacon and continue cooking for 5 minutes.
    Preheat the oven to 190°C (375°F). In a bowl, whisk the eggs with the heavy cream. Season with salt and pepper.
    Place the pie crust in a pie dish. Prick the bottom with a fork and spread the carrot/bacon mixture over it, then pour the egg mixture on top. Sprinkle with grated cheese and bake for 30 minutes. Serve when the quiche is nicely golden brown.

  • 1 drizzle of olive oil
