Vendée ham with mogettes

Instructions

  • 1.   Soak the mogettes (dried beans) in unsalted water the night before.
  • 2.   Only the current year's harvest does not require soaking.
  • 3.   In a pot, bring the water to a boil and add the mogettes. Let cook for an hour with the bay leaf, thyme, and garlic.
  • 4.   At the end of cooking, season with Noirmoutier salt and freshly ground pepper, then add a few hazelnuts of semi-salted butter. Keep warm while cooking the ham.
  • 5.   For cooking the ham, quickly grill it, a simple back and forth is enough.
  • 6.   To make it less salty (according to taste), soak it in milk for an hour or two before cooking.
  • 7.   Serve immediately.

  • 20 g of salted butter
  • 1 pinch of Guérande salt
