Lemon Chicken Light

A light recipe for lemon chicken with chicken thighs, small onions, lemon wedges, and button mushrooms. Low in fat, it is well seasoned with herbs and can be served with whole grain rice, sautéed potatoes, or whole wheat pasta.

Instructions

  • 1.   Steam the potatoes and green beans for 25 minutes.
  • 2.   In a Dutch oven, sauté the chicken thighs over high heat for about 10 minutes in 2 tablespoons of oil. Season with salt, pepper, and sprinkle with Herbes de Provence. Cut a lemon into 4 wedges, rinse the button mushrooms.
  • 3.   When the thighs start to brown, reduce the heat and add the juice of a fresh lemon, the sour cream, the small onions, the lemon wedges, and the mushrooms.
  • 4.   Add 1 to 2 tablespoons of water if needed. Cover and let simmer over low heat for about 20 minutes. Serve immediately with a side dish of your choice.

  • 3 tablespoon of light liquid cream
  • 2 lemons
  • 2 tablespoon of Provence herb
  • 1 tablespoon of olive oil
  • 4 floury potatoes
  • 200 g of green bean
  • salt (according to taste)
  • pepper (according to taste)
