1. Peel the carrots and ginger. Peel the garlic and onion.
2. Cut the chicken into cubes, peel and cut the shrimp into thirds.
3. Soak the black mushrooms in boiling water for 15 minutes.
4. Cut the cabbage into strips and blanch them for a few minutes in boiling water, then rinse with cold water.
5. Blend together the ginger, carrots, garlic, onion, chicken, and mushrooms. Add soy sauce, then the cabbage and crab meat.
6. Complete the mixture with the chopped shrimp, five spices, and chili. Season with salt and pepper.
7. Using scissors, cut the rice paper sheets in half, then place a damp cloth on your work surface. Also, prepare a bowl filled with warm water.
8. Dip a half sheet of rice paper in the water, then place it on the damp cloth. Once well soaked, the sheet becomes pliable.
9. Place a teaspoon of filling in the center. Wrap with the rice paper and seal the dumpling by pinching.
10. As you go, place the dumplings in the steamer basket lined with parchment paper.
11. Steam for 15 minutes.
12. Enjoy hot in moderation, with a green salad.
