Light Steamed Fish Balls with Spicy Thai Sauce

Instructions

  • 1.   Pour a tablespoon of lemon juice into a bowl. Add the sweetener, a tablespoon of fish sauce, and the chili.
  • 2.   Wash and chop the coriander and mint.
  • 3.   Stir in two tablespoons of water, emulsify with a fork, and chill.
  • 4.   Remove the fish bones and chop the fish with a knife.
  • 5.   In a bowl, mix the fish with two tablespoons of lemon juice, curry, the remaining fish sauce, egg, chopped coriander, and mint.
  • 6.   Mix to obtain a homogeneous stuffing and form small balls.
  • 7.   Cover the bottom of your steamer basket with parchment paper, then place the balls ensuring they do not touch.
  • 8.   Cover and steam for 12 minutes.
  • 9.   Serve hot with the spicy sauce and green vegetables.
