Foie gras sauce for pasta

Instructions

  • 1.   Cook your pasta according to the package instructions in a pot of boiling water, drain and set aside.
  • 2.   Prepare the foie gras sauce:

    Melt the butter in a saucepan to sauté the minced shallot until golden brown.

    Add the heavy cream and bring to a boil, then reduce the heat. Season with salt and pepper.

    Add the diced foie gras (reserve some to sprinkle on the plates once served) and stir until it has melted and is mixed with the cream.

    Serve the pasta on plates, add the foie gras sauce and then the diced foie gras, mix, adjust the seasoning if necessary.

  • 10 cl of sour cream
  • salt (according to taste)
