Raclette Cheese Macaroni Risotto

A comforting and flavorful dish, perfect for cheese lovers. This macaroni risotto is enriched with raclette cheese and a touch of white wine, ideal for winter evenings.

Instructions

  • 1.   Finely chop the shallots and sauté them in a knob of butter.
  • 2.   Add the uncooked macaroni and sauté for two minutes, stirring constantly.
  • 3.   Add a glass of white wine and let it evaporate.
  • 4.   Add a ladle of broth and continue the process until the pasta is tender but still slightly resistant.
  • 5.   Over low heat, add the roughly chopped raclette cheese and a small knob of butter, mix well.
  • 6.   Adjust the seasoning and serve with sliced duck breast and some herbs.
