Thai-style mussels

A recipe for mussels inspired by Thai flavors, perfect for a change from the classic white wine mussels. Ideal for a light dinner without starches.

Instructions

  • 1.   Thoroughly rinse the mussels and possibly brush them.
  • 2.   Sauté the thinly sliced shallot in a little oil in a large pot.
  • 3.   Add the pressed or finely chopped garlic.
  • 4.   Add the bell peppers cut into 0.5 cm strips and cook until they soften.
  • 5.   Add the leeks cut into similar strips.
  • 6.   Once the vegetables are tender and colored, add the mussels.
  • 7.   Pour in the coconut milk and add the curry paste, mix well.
  • 8.   Simmer until the mussels have opened.
  • 9.   Taste the sauce and adjust the seasoning.
  • 10.   Serve in shallow bowls with a little sauce, add the cilantro if desired.

  • 2 kg of mussel
  • 2 pointed red pepper
  • 2 large leek
  • 2 large shallot
  • 2 garlic cloves
  • 300 ml of coconut milk
  • 1 teaspoon of yellow curry paste
  • 1 handful of fresh coriander
  • 1 Cayenne pepper (optional)
  • 1 peanut oil
  • salt (according to taste)
  • pepper (according to taste)
