Instructions

  • 1.   Grill the bacon cut into small pieces and set aside. Add the leeks, sauté for 5 minutes, then add the butter and thyme. Mix and add the milk, cream, broth, and potatoes. Cover and cook for 20 minutes over medium heat (stir occasionally). Grate the cheddar and add it to the soup at the end of cooking with the bacon.
  • 2.   Serve piping hot and enjoy with slices of toasted bread under a blanket.
