Crab cakes

A very popular seaside recipe in the United States, crab cakes are large croquettes made with crab meat. Here, the crab meat is replaced with crumbled hearts of palm, to which some seasonings are added for a truly amazing result.

Instructions

  • 1.   Rinse and drain the hearts of palm. Finely crumble them (if possible, removing any tough pieces) in a bowl.
    Mix with mayonnaise using a spatula.
    Grind the seaweed into a fine powder using a mini chopper and add it. Mix well.
    Add the parsley, garlic, lemon juice, finely chopped scallions, and mix.
    Add the breadcrumbs and mix again. Season with salt.
    Shape into flat croquettes, coat with flour, then cook them in a pan with a little oil over high heat until they are golden brown.
    Serve with tartar sauce, cocktail sauce, herb or curry mayonnaise, chive and horseradish cream...

Notes & Suggestions

  • The crab cakes can be fried or also browned in the oven.

  • 225 g of heart of palm
  • 80 g of vegetable mayonnaise
  • 1 tablespoon of chopped parsley
  • ¼ teaspoon of garlic powder
  • 2 tablespoon of lemon juice
  • 2 spring onions
  • 80 g of breadcrumbs
  • 1 cup of flour
  • 1 cup of oil
  • salt (according to taste)
