Sweet and savory curry chicken

The best chicken curry recipe I have ever tried. Delicately flavored, it's a dish I make over and over again, much to the delight of the family.

Instructions

  • 1.   Heat the oil in a Dutch oven over low/medium heat.
    Slice the onion and grate the apple, then sauté them in the oil for 3 to 4 minutes.
  • 2.   Cut the chicken into small pieces (about 2 to 3 cm), add them to the Dutch oven and continue cooking for 7 to 8 minutes over medium/high heat.
    Sprinkle with curry, cinnamon, nutmeg, salt, and pepper, and mix well.
  • 3.   Add peeled, seeded, and chopped tomatoes. (Out of season, canned peeled tomatoes work well)
    Add the broth (1 cube/200ml) => for a slightly more "tomato" version, use some juice from the can to replace some of the water.
    Let simmer for 25 minutes over low heat and covered.
  • 4.   Just before serving, add the coconut milk (or cream) and lemon juice. Mix well.

    When serving, add sliced bananas and/or a few almonds (hazelnuts, walnuts, etc) according to taste.
  • 5.   Serve with rice, naan bread, or regular bread.

  • 2 tablespoon of oil
  • 1 onion
  • 1 apple
  • 6 chicken cutlets
  • 2 tablespoon of curry powder
  • 1 pinch of cinnamon
  • 1 pinch of nutmeg
  • Hors saison, des tomates pelées en conserve vont aussi :
  • 3 tomatoes
  • 200 ml of chicken broth
  • Ou de la crème fraiche :
  • 50 g of coconut milk
  • ½ lemons
  • 1 banana
  • Ou des noix, ou que des amandes etc... :
  • 1 tablespoon of almond
  • 1 tablespoon of hazelnut
  • 1 cup of rice (optional)
