1. Peel the shallots, then cut them into quarters. Peel and grate the ginger.
Remove the outer layers of the lemongrass, then finely slice it. Squeeze the lemon.
Cut the rabbit loins into pieces.

Put the shallots and ginger in the bowl. Program 5 seconds/speed 5.
Scrape the sides, pour a drizzle of oil. Program 5 minutes/100 °C/speed 1 without the measuring cup.
Add the rabbit, lemongrass, lemon juice, broth, cornstarch, veal stock, salt, and pepper. Program 50 minutes/95 °C/speed 1/REVERSE.
Check the meat's doneness. Extend if necessary.
Serve immediately after cooking with rice.
