Chicken Curry with Coconut Milk

Instructions

  • 1.   Cut the chicken breasts into small pieces.
  • 2.   Heat a non-stick pot over high heat.
  • 3.   Sear the chicken pieces until they are golden brown.
  • 4.   Add the peeled tomatoes (with their juice) and the curry powder. Mix well and let it cook for 2 minutes.
  • 5.   Reduce the heat to medium and add the coconut milk, then the cayenne pepper, salt, and pepper. Stir and let it cook for about 10 minutes, stirring regularly.
  • 6.   Serve immediately with rice (non-KETO)
    or for a KETO alternative: Cauliflower rice or Green beans, for example.
