Instructions
1. Preheat the oven to 180°C (350°F).
Roll out the puff pastry in a pie dish, with the paper facing outwards. Fill it with baking beads or dried vegetables, then bake for 10 minutes.
Peel and thinly slice the onions, then sweat them covered in a saucepan with butter for 10 to 12 minutes.
Add the honey, then continue cooking the compote uncovered for 5 minutes.
Peel the apple and dice it into 5mm cubes.
Sear the bacon slices in a pan. Once they start to color, add the apples and continue cooking for 3 minutes before draining them.
Beat the eggs with the milk and cream, seasoning with salt and pepper.
2. Remove the baking beads from the pie crust, then spread the onion compote. Next, distribute the bacon slices and apples, then cover them with the egg mixture.
Bake for at least 20 minutes.
