Express Noodles with Shrimp and Crunchy Vegetables

Instructions

  • 1.   Finely slice the mushrooms and broccoli (use only the florets). Cut the cherry tomatoes into quarters.
  • 2.   Open the cups and add the provided spices. Spread the vegetables on top, then add grated lemon zest and juice (to taste) as well as ½ tbsp of soy sauce per cup. Top with the shrimp and pour 3 dl of boiling water over each cup. Cover and let sit for 3 minutes.
  • 3.   Optionally transfer to large bowls. Add roughly chopped mint and coriander, mix, and serve.
  • 4.   Tip: You can replace the shrimp with leftover cooked meat: shredded chicken, small cubes of pork or sausages... Also great with other vegetables, such as thinly sliced zucchini or carrots.

  • 100 g of cherry tomato
  • 1 lemon
  • ½ bunch of fresh mint
  • ½ bunch of fresh coriander
  • 2 tablespoon of soy sauce
  • 4 cup of instant noodles
  • salt (according to taste)
  • pepper (according to taste)
