Chicken with Pomelo and Coconut Milk Satay

This is chicken cooked in coconut milk, with satay sauce and Thai chili paste, with roasted peanuts and fried onions. It's much lighter than it looks, as it also has pomelo.

Instructions

  • 1.   Open all the pomelos and 'remove the flesh. Crumble it roughly without crushing it.
  • 2.   Remove the skin, bones, and cartilage from the chicken thighs. Cut the flesh into pieces. Then finely chop it.
  • 3.   Also chop the roasted unsalted peanuts.
  • 4.   Put a tablespoon of oil, coconut milk, and chopped chicken in the wok over fairly high heat.
  • 5.   Add the satay sauce and Thai chili paste.
  • 6.   Mix constantly, scraping the sauce that caramelizes on the edge of the wok. The sauce should be creamy before adding the rest.
  • 7.   Add the pomelo, fried onions, and chopped peanuts when the chicken looks cooked. Pour in the brown sugar and fish sauce. Mix again and cook for 2-3 minutes.
  • 8.   Pour into a dish, add some fried onions, peanuts, and coriander. Serve immediately and enjoy with a spoon!
