1. Prepare soft-boiled eggs:
6 minutes in boiling water
put them in cold water
bonus/secret:
marinate the eggs in soy sauce in the fridge for hours (no time limit, the longer the better)
For an effective marination, put the eggs in a freezer bag and cover them with 50% soy sauce 50% water and close it so there is no air
2. Prepare the broth by boiling shrimp carcasses (with heads) with miso, dashi, mirin, sake, soy sauce, and chicken broth.
Adjust the taste as needed
3. Brown the prawns in a pan with crushed garlic in butter
4. caramelize the thinly sliced pork belly in a mixture of soy sauce, mirin, ginger, and garlic
5. prepare the vegetables:
- mushrooms in pieces;
- ginger in large slices;
- onions sliced roughly;
6. Add optional vegetables (spinach, carrot sticks) that require little cooking
7. Service:
put the noodles in a bowl
pour the broth (be careful not to serve lemongrass)
add the eggs
a few drops of sesame oil just before serving
