Surf and Turf Ramen with Prawns

Instructions

  • 1.   Prepare soft-boiled eggs:
    6 minutes in boiling water
    put them in cold water

    bonus/secret:
    marinate the eggs in soy sauce in the fridge for hours (no time limit, the longer the better)
    For an effective marination, put the eggs in a freezer bag and cover them with 50% soy sauce 50% water and close it so there is no air
  • 2.   Prepare the broth by boiling shrimp carcasses (with heads) with miso, dashi, mirin, sake, soy sauce, and chicken broth.
    Adjust the taste as needed
  • 3.   Brown the prawns in a pan with crushed garlic in butter
  • 4.   caramelize the thinly sliced pork belly in a mixture of soy sauce, mirin, ginger, and garlic
  • 5.   prepare the vegetables:
    - mushrooms in pieces;
    - ginger in large slices;
    - onions sliced roughly;
  • 6.   Add optional vegetables (spinach, carrot sticks) that require little cooking
  • 7.   Service:
    put the noodles in a bowl
    pour the broth (be careful not to serve lemongrass)
    add the eggs
    a few drops of sesame oil just before serving

Notes & Suggestions

  • possibility to replace shiitake with black mushrooms
  • possibility to add other vegetables that require more cooking: leek and zucchini

  • 80 g of noodle
  • 2 eggs
  • 200 g of prawn
  • 200 g of pork shoulder
  • 4 garlic cloves
  • 5 g of butter
  • 1 large fresh ginger
  • 20 g of soybean sprout
  • 30 g of shiitake
  • 2 green onions
  • 2 teaspoon of sesame oil
  • 30 g of black mushroom (optional)
  • ½ bunch of fresh spinach (optional)
  • 1 carrot (optional)
  • Bouillon :
  • 2 tablespoon of miso
  • 1 bag of dashi
  • 1 tablespoon of mirin
  • 2 tablespoon of cooking sake
  • 2 tablespoon of soy sauce
  • ½ chicken bouillon cubes
