Beef roll-ups

Instructions

  • 1.   Flatten the steak slices with a meat mallet (or any other flat utensil).
  • 2.   Place a square of salted pork belly (2 cm) + 1 sprig of parsley + 1/2 clove of garlic in the center.
  • 3.   Roll up the steak slice and tie it with kitchen twine.
  • 4.   Prepare the sauce by thinly slicing the onions and sautéing them in a Dutch oven with olive oil.
  • 5.   Once the onions are golden, add the tomato, two cloves of garlic, a glass of white wine, and a bouquet garni.
  • 6.   Simmer gently for 20 minutes to prepare a good, creamy tomato sauce (you can add some carrot and celery slices to enhance the flavor).
  • 7.   When the sauce is ready, add the meat and continue cooking for 20 minutes over low heat.
