Ham and leek Parmentier

Instructions

  • 1.   Preheat the oven to 210°C (410°F). Fill a saucepan with water, add a pinch of salt, and bring to a boil.

    Peel the potatoes and cut them into small cubes.

    Place them in the boiling salted water and cook for about 8 minutes.
  • 2.   Pour a tablespoon of olive oil into a frying pan.

    Peel the leeks and cut them into thin slices. Place them in the frying pan.

    Sauté for about 3 minutes, stirring regularly.

    If the ham is not skinless, remove the rind.

    Cut it into slices.

    Add them to the frying pan and mix for 2 minutes.
  • 3.   Drain the potatoes.

    Mash them with a fork or a potato masher.

    Drizzle them with a tablespoon of olive oil.

    Place the leek and ham mixture in a lightly greased gratin dish.

    Cover with the mashed potatoes.
  • 4.   Season with salt and pepper.

    Bake for 20 minutes.

    Serve hot.
