Instructions

  • 1.   Cut the rabbit into pieces or ask your butcher to do it.
  • 2.   Peel the onion, shallots, and garlic cloves, then chop them. Peel the carrot and cut it into thin slices. Cut the bacon into small pieces, unless it is already lardons.
  • 3.   Melt the butter in a pan. Brown the bacon pieces with the chopped vegetables, then add the rabbit pieces and stir.
  • 4.   When the meat is nicely browned on each side, pour in the white wine and cover with water. Season with salt and pepper, add the bouquet garni, and stir. Let simmer for 1 hour.
  • 5.   Wash and slice the button mushrooms. After the cooking hour, add them to the casserole dish and pour in the tomato puree. Stir and let simmer for an additional 30 minutes.
  • 6.   Dissolve the cornstarch in a little water and add it to the dish, mix and heat again for a few minutes to thicken the sauce.
  • 7.   Serve your Italian-style rabbit hot with fresh pasta, such as tagliatelle.

  • 200 g of button mushroom
  • 100 g of smoked bacon
  • 30 g of butter
  • 6 shallots
  • 3 garlic cloves
  • 1 carrot
  • 1 onion
  • 1 cup of tomato paste
  • 2 tablespoon of cornstarch
  • 500 g of tagliatelle
  • salt (according to taste)
  • pepper (according to taste)
