Instructions
1. Boil the chayotes with the skin on in a pot of hot water for 20-25 minutes. Then, remove them from the water and let them cool.
2. In a pan, fry your bacon bits. Set aside.
3. Take your vegetables, peel them, and cut them into cubes like potatoes. Cook your onion in a pan with a drizzle of olive oil.
4. Once the onion is softened, add your chayotes, bacon bits, bay leaf, minced and peeled garlic, salt, and pepper. Sauté everything for 10 minutes, until the chayotes are tender. Finally, add the chopped parsley and mix well.
5. Enjoy them as a side dish with meat or fish. Bon appétit! 😋
