Red Lentils & Light Coconut Shrimp Sauce

Instructions

  • 1.   Rinse the lentils, then cook them for 10-12 minutes in boiling salted water (or in the Monsieur Cuisine if possible). Drain them.
  • 2.   Slice the onion, cut the zucchini and carrot into small cubes.
  • 3.   In a sauté pan or air fryer in "grill" mode (if available), heat the oil and sauté the onion, zucchini, and carrot for 5 minutes.
  • 4.   Add the shrimp, curry paste (or curry powder), and coconut milk. Season with salt and pepper. Simmer over low heat for 5-8 minutes until the shrimp are cooked (or reheated if already cooked).
  • 5.   Stir in the drained red lentils and cook for an additional 2 minutes.
  • 6.   Serve this shrimp curry with lentils in plates.

  • 1 carrot
  • 1 onion
  • 1 tablespoon of curry paste
  • 1 tablespoon of olive oil
