1. Remove the green parts and roots of the leeks and peel off the first layer.
2. Wash them and finely slice them.
3. Melt them in a sauté pan with butter. If needed, add a little water, they should be very tender.
4. Add the sour cream and mustard, and mix well.
5. On 6 slices of sandwich bread, spread the leek mixture.
6. Cover with a slice of smoked salmon, folding it if necessary.
7. Cut the mozzarella ball into slices, then cut each slice in half.
8. Place pieces of mozzarella on each croque.
9. Cover with the remaining 6 slices of bread.
10. Butter the top and bottom of the croque monsieur.
11. Cook them in a grill pan until they have a nice color.
12. Serve with a nice salad.
