1. MEAT OPTION: Cut the meat into small pieces and put them in a casserole dish. Cook for about 15 minutes until all the water has evaporated.
Add the oil. Let it brown for about 5 minutes.
2. Add finely minced garlic and chopped onions. Mix and let it brown for about 5 minutes, stirring occasionally.
Add the diluted tomato paste with ½ glass of water. Add the blended fresh tomato. Mix and cook for 5 minutes, stirring regularly to prevent the tomato from sticking.
Then add 1.25L of water, crushed condiments (NOKOSS), pepper, Espelette pepper, green pepper, green onion, Chinese parsley, bell pepper, onion, a little salt, and bay leaves. Mix. Also add the peanut paste.
3. Cook over medium heat for 20 minutes.
FISH OPTION: Add the gutted and washed fish at this point. Once cooked, remove the bones, flake the fish, and return it to the pot towards the end of cooking.
After 20 minutes, you will see that the peanut paste has completely mixed with the sauce.
Peel the sweet potatoes and cut them into pieces about 2-3cm thick.
Add the sweet potatoes and fresh peppers to the sauce.
4. Cook over medium heat for another 20 minutes.
After 20 minutes of cooking, the sweet potato is cooked. Remove it and place it in a bowl. Also remove the peppers before they burst.
Continue cooking the mafé sauce for another 15 minutes over very low heat. The oil should rise to the surface.
Serve the rice on a plate. Add meat, sauce, and some pieces of sweet potato. Enjoy with the pepper. Bon appétit!
