Italian-style Filet Mignon in Pastry

Instructions

  • 1.   Preheat the oven to 200°C (th 7/8).
  • 2.   On the puff pastry, arrange the slices of smoked ham one under the other, cut the mozzarella into slices and spread them on the ham (without overlapping), then place the sun-dried tomato petals.
  • 3.   Place the filet mignon on top of the tomatoes, season with pepper and sprinkle with Herbes de Provence.
  • 4.   Fold the pastry over the two ends of the filet, then fold the two (long) sides.
  • 5.   Flip the roast with the seam side down.
  • 6.   Bake for about 45 minutes, if the crust gets too dark, cover with aluminum foil.
  • 7.   Note: This roast can be served with a sauce made of heavy cream mixed with 2 or 3 tablespoons of garlic and herb cheese.
