Tuscan Chicken

Instructions

  • 1.   In a skillet, sauté the sliced chicken and finely chopped garlic in a knob of butter (or a drizzle of olive oil), 4 minutes on each side.
  • 2.   Meanwhile, cook the pasta according to the package instructions.
  • 3.   Towards the end of cooking, add the sun-dried tomatoes, spinach, cream, and 2 tablespoons of cooking water per person. Cook until the spinach is wilted. Season with salt and pepper, add grated Parmesan cheese and drained pasta, mix well, it's ready!
