Instructions

  • 1.   Preheat the oven to 240 °C (th.8).
  • 2.   Heat the mashed potatoes for 10 minutes in a saucepan over low heat, stirring regularly.
  • 3.   Cut the stale bread slices into small cubes and the bacon slices into strips. Cook them separately, with a sprig of rosemary, in a lightly oiled pan until they are well toasted.
  • 4.   Fill 4 buttered ramekins or mini-cocottes with the mashed potatoes. Make two wells in each one and crack the eggs into them. Bake for 10 minutes, keeping an eye on them (the whites should be just set).
  • 5.   Serve the baked eggs immediately, sprinkled with a few croutons and crumbled bacon. Garnish with small sprigs of rosemary.
