Parmentier of blood sausage with two apples

Instructions

  • 1.   Peel the potatoes and cook them in water or steam. Pass them through a vegetable mill. Add a pinch of nutmeg, salt, and pepper.
  • 2.   Do the same with the apples (but do not add nutmeg !!).
  • 3.   Serves 4
  • 4.   Cut the onions and melt them in a frying pan.
  • 5.   Remove the black pudding casing and cook it in a frying pan with a little salted butter. Add the onions and cook for another 5 minutes.
  • 6.   Lightly butter a gratin dish. Layer a layer of mashed potatoes. Add a layer of applesauce. Then add the blood sausage mixed with onions. Add another layer of mashed potatoes and a layer of applesauce.
  • 7.   Add grated cheese and bake in the oven to gratinate.

  • 2 onions
  • 4 tablespoon of grated cheese
  • 1 pinch of nutmeg
  • 1 pinch of salt
