Instructions

  • 1.   Wash and drain the sorrel. Separate the leaves from the stems and blanch the leaves in a pot of salted boiling water for 3 minutes. Drain carefully and squeeze to remove excess water.
  • 2.   Heat the cream over low heat and add the sorrel leaves. Cook for 5 minutes, season with salt and pepper.
  • 3.   Sear the salmon fillets for about 5 minutes on each side in a non-stick pan. Season with salt and pepper.
  • 4.   Serve the sorrel on plates, topped with the salmon fillets and sprinkled with pink peppercorns.
