Chicken Coconut Broth

Instructions

  • 1.   Cut 1 kg of chicken into small cubes.
  • 2.   Slice and sauté 2 medium onions.
  • 3.   Add 2 cloves of minced garlic, 1 piece of finely chopped fresh ginger, and 1 tablespoon of Madras curry powder.
  • 4.   Add the chicken pieces and cook over high heat for 3 to 4 minutes.
  • 5.   Add 1 liter of chicken broth, salt, and pepper. Reduce the heat and cook for 20 minutes.
  • 6.   Add the coconut milk and frozen peas. Let simmer for another 4 to 5 minutes.
  • 7.   Garnish with fresh coriander leaves, diced tart apple, and lemon wedges.
